We process the walnuts as for the industrial applications, so for the use as the delicacy for retail customers.

The processing quality is controlled according to the specifications and requirements of the vendors. At the same time observed are the intern regulations and instructions related to the quality management resulting from the USDA (US Department of Agriculture Standards).

The basic qualitative sorting is according to size and color.

WALNUT SIZE

Walnut Halves
This group includes 80-85% of walnuts halves or even higher percentage, including the nuts of 3/4 size of halves. Remaining part is formed by quarters.

Walnut Pieces
This category consists of that part of nuts which do not pass through the screen with round mesh – size of 11 mm. This group contains along with the quarters also 2-5% of walnuts halves.

Walnut Small Pieces
This group consists of nuts passing through the screen with round mesh – size 11 mm but do not pass through the screen mesh size – 3 mm. The eights are then subdivided into another two groups: those passing through screen – mesh size 11 mm, but do not pass through screen – round mesh size 6 mm, and those passing through screen – round mesh size 6 mm but do not pass through screen – mesh size 3 mm.

Walnut Meal
The smallest parts of walnuts – less than 3 mm in diameter represent the accompanying product of walnuts processing procedure, which may be found in variety of consistence: from crumbs to fine powder. They are used to strew the cakes, are being added to the dough and poured dough. The crumbs may be also added to the nut mixtures and pasta. They can be also used in stuffings or as a thickener.

WALNUT COLOR

The walnuts are classified according to the colour with regard to the requirements of the vendors. The spectral scale of the walnuts colours provided in the figure illustrates the possibilities of the classification according to the nuts colours shades.

Extra light – the percentage tolerance related to the weight allows for 15% maximum of darker than, out of which 2% may be darker than only.

Light – the percentage tolerance related to the weight allows for 15% maximum of darker than out of which 2% may be darker than only.

Light amber – the percentage tolerance related to the weight allows for 15% maximum of darker than, out of which 2% may be darker only.

Amber – the percentage tolerance related to the weight allows 10% maximum darker from this type of colour.

WALNUT PACKING

All walnuts categories – according to size, colour or their combination, may be delivered in wholesale packing: in big-bag (400 to 1000 kg) or polypropylene woven sacks (25 and 30 kg).

The walnuts categories with nuts halves are packed in cartons with the paper insert (7,5 kg; 8 kg; 9 kg).

We also offer retail packing (1000g; 500g; 100g; 40g).

The actual packing specification depends upon the packed walnuts size, their durability, way of transport and storing at vendors.

WALNUT STORING

The walnuts should be stored in space with relative humidity of 55–65% and low temperature of 0–5°C.

To assume the maximum nuts life, we store them in cool, odorfree space, with no air, humidity and light access.

ALLOWED TOLERANCES

During the processing and packing of individual products, certain deviations may occur. They are listed in the following table Allowed tolerances (percentage of kernel weight):
